How to make Mysore Bajji / Mysore Bonda

One of Karnataka's favorite, a hot delicious snack, Mysore bajji, also known as Mysore Bonda. A perfect combination to go with your evening tea.

How to make perfect mysore bajji or mysore bonda
Ingredients :

All purpose flour / Maida - 1 cup
Rice flour - 1/4th cup
Butter milk - 1 cup
Cumin Seeds
Chopped ginger - 1 sp
Chopped green chillies - 1 sp
Chopped coconut - 1 sp (optional)
Cooking soda - 1/2 sp
Salt to taste

Procedure:

1. Take all purpose flour in a mixing bowl, add rice flour, cooking soda and salt and mix well. Keep adding butter milk and make a nice batter. The consistency should be like this in the picture

2. Due to butter milk and soda it gets puffed up a little. Keep it aside for 10 min

3. After 10 min add cumin seeds, chopped ginger, green chillies and coconut if you are using. (i did not use ). You can make it right away or let it rest for 1 hour, more softer bajjis you will get

4. Now, wet your hands and take the batter in small dumplings and drop it in the oil. The oil should be medium to low heat. The bondas automatically become round, fry them till you get a nice brown color and serve it with any chatni of your choice

[Note:If the bondas are turning flat, add bit of maida to it, you will get perfect mysore bajjis :)]

Mother Teresa : A remembrance

This day of August 26th 2010, marks the birth centenary of Mother Teresa, the epitome of love and compassion.

Mother Teresa's(26th Aug 1910- 5th Sept 1997) original name was Agnes Gonxha Bojaxhiu. Born on August 26, 1910 in Skopje, Macedonia in a successful merchant family, she was the youngest of the three siblings. At the age of 12, she decided that she wanted to be a missionary and spread the love of Christ. At the age of 18 she left her parental home in Skopje and joined the Sisters of Loreto, an Irish community of nuns with missions in India.

Rest is all history. For over 45 years she served the mankind, helping and caring the poor, sick, homeless, dying and orphaned people. Hope we follow in her footsteps and help bring a smile on the less privileged

The new Miss Universe has been crowned. The title is bagged by gorgeous, intelligent and sexy lady from Mexico Jimena Navarrete. The first step towards reaching this international glory is Miss India title. The winner of Femina Miss India will represent India in the Miss Universe contest. Seven Pounds


Watched a movie this weekend after a very long time. The movie is an emotional story of a man who saves the lives of Seven struggling individuals. Ben Thomas, an IRS agent with a fateful secret embarks on an extraordinary journey of redemption by forever changing the lives of these strange people.

Will Smith is brilliant as usual in a quiet and rather introvert character. Directed by Gabriele Muccino, this 2008 release, though got negative reviews from critics was a box office hit.
A must watch for all Will Smith fans

The wrapper of Parle-G biscuit underwent so many modifications from thick butter paper to the thin glossy one. Even miniature and family packs have come now. But the taste remains just the same

Coconut rice

Coconut rice, another very simple, easy and yummy rice recipe after Tomato rice. South Indians can make anything and everything out of rice I must say.
How to make Coconut Rice
Ingredients :

Rice - 2 cups
Freshly grated coconut - 1 cup
Oil - 2 tbsp (use coconut oil for extra flavor)
Red chillies - 2
Green chilles - 4 to 5(as per taste)
Mustard
Cummin seeds
Chana Dal -1 tbsp
Urad Dal - 1tbsp
Hing( Asafetida) - a pinch (Optional)
Roasted Cashew nuts - 2 spoon
Chopped ginger - 1 tbsp
Curry leaves - few
salt to taste
sugar - 1/2 tbsp
Corainder leaves - 1 spoon

Procedure :

1. Put oil in a pan. Add all the ingredients one by one, in the order of red chillies, mustard seeds, cumin seeds, chana dal, curry leaves, urad dal, green chillies.

2. After few seconds add roasted cashew nuts. Then is the turn of chopped ginger, salt to taste. Then add the coconut powder and mix well for 2 min. You get a nice aroma. Add coriander leaves.

3. Now add the cooked rice and mix real good. Yummy Coconut rice is ready for serving!

He wears his heavy gear in that hot climate

You go out to lunch in a restaurant.
He survives in a jungles on whatever he gets.

You care for your Gizmos. He cares for his weapon more than anything else

You take your wife out for shopping. He holds her letter to smell her perfume

You teach your baby to walk. He sees his baby grow up in pictures

You talk about collateral damage. He ensures that you are evacuated first, even thought he is also injured

You send your child to the best of schools. He builds school in remote areas

He assists in building roads to connect remote areas. His own village road washes away in floods

You are asked to do odd jobs by your parents- you don't. He does exactly what he is told,
even if it puts his life in danger

you sleep at home in peace. He is on guard at the border to ensure your peace.

You crawl into your soft bed comfortable, every night. His assignments usually starts when darkness falls.

You get accolades for standing second in class. For him there are no 'runners up' in war.

You remember him & God in war. Post war he is forgotten....

Mysore Pak


Mysore Pak, a very popular South Indian sweet and a favorite of all. There are two kinds of Mysore Pak. One is a bit hard, perforated one, the other soft and melt
s in the mouth (we call it 'Special Mysore Pak').




I have very fond memories of this Special Mysore Pak. My mama (maternal uncle) used to bring this home whenever he used to visit us when we were kids. We
all brothers and sisters used to relish this special mysore pak nibbling at it for hours. Yesterday was my mother's b'day and i made this for the first time. It was a hit :)

Ingredients :

Chick pea flour (besan) - 2 cups
Warm and liquid clarified butter - 1 and 1/2 cups
Sugar - 2 cups
Water - 1/4 or 1/2 cups

Procedure :

1. Put besan in a bowl. Use fresh besan for best results. See that there are no lumps in them, if so you can sieve it
2. Put 1/2 cup warm ghee and mix well making sure there are no lumps
3. Pour the remaining 1 cup ghee and mix well again, let it sit for 15 to 20 min. The mixture looks somewhat like this


4. After 20 min. place a thick bottomed pan, put sugar and half cup water. Let it boil till one string consistency is attained. Lower the heat
5. Now slowly add this above mixture stirring continuously. Keep stirring until the mixture thickens and the oil starts separating from the sides
6. Grease a deep tray or a plate. Pour this mixture. It will solidify quickly within few minutes. When you feel it is getting solidified cut it into desired shape

[Note: To test if done, pour a small drop of the mixture on the plate, if it becomes solid immediately, that means its done]
